Bahamian Yellow Grits Breakfast
Ingredients

  • 1/2 pound - bacon, coarsely diced
  • 1/2 cup - dry YELLOW corn Grits (perpare per package)
  • 4 or 5 - eggs (lightly beaten)
  • 1 1/2 tablespoon - butter
  • Salt
  • Pepper
  • Hot sauce

Directions

"Here is a recipe I learned in the Bahamas from a local version of "Bloody Mary" of "South Pacific." It is not very healthy but, of course, tastes great ... I suppose it would work with good white grits, but to us that is a sacrilege."

Prepare grits, cover and let sit off heat. Fry up bacon, drain all but a tablespoon or more of fat. Stir in eggs and scramble until almost firm. Stir in cooked grits, breaking up using spatula in a cutting motion. Add butter and mix, stir well. Serve with hot sauce. Use a good-flavored Louisiana sauce, not overly hot Tabasco. Salt and maybe pepper to taste.
