Vegetable Beef Soup Recipe
Ingredients
* 1 pound - ground beef or
chuck
* 4 cups - water
* 1 small can - corn
* 1 can - lima beans
* 1 medium - onion
(diced)
* 5 medium - potatoes
(cubed)
* 5 - sliced carrots
* Salt and Pepper to
taste
* 32 oz. can - tomato
juice
Directions
(You may substitute crushed
tomatoes. If you substitute add equal parts of tomatoes and
water.)
Pour half of tomato Juice and
water into large pan add vegetables and bring to a boil. Reduce
heat to medium heat and cook for 1 hour. Drop ground meat in
and stir carefully.
You may drop in as small
meatballs if desired or loose. Reduce heat and simmer for an
additional 3 hours. Use additional juice as needed.
Some people like to add a
little spice by slicing thinly two jalapeno peppers. Try it if
you dare, it gets really hot.
