Sweet Corn Muffins Recipe

Ingredients

* 3/4 cup - all-purpose flour (sifted)
* 2 1/2 teaspoons - double acting baking powder
* 3 - 5 tablespoons - sugar
* 3/4 teaspoon - salt
* 1 1/4 cup - yellow or white water ground corn meal
* 1 - egg
* 2 - 3 tablespoons - butter or drippings (melted)
* 1 cup - milk

Directions

Nothing better on a cold winters night with Homemade Veggie and Beef Soup. Try it - you will love it.

Preheat oven to 425 degrees. Have all ingredients at about 75 degrees. Grease the pan with butter. Place it in the oven until sizzling hot.

Pour the liquid into the dry ingredients. Combine with a few rapid strokes. Place the butter in the hot muffin pan. Bake for about 20 - 25 minutes.

Sift together:
3/4 cup Sifted All-Purpose Flour
2 1/2 teaspoon Double Acting Baking Powder
3-5 tablespoon Sugar
3/4 teaspoon Salt

Add:
1 1/4 cups - yellow or white water ground corn meal

Beat in a separate bowl:
1 Egg

Beat into it:
2-3 tablespoon Melted Butter or drippings
1 cup Milk
