South of the Border Grits Recipe
Ingredients
* 1 tablespoon chunky
salsa
* 1 oz favorite cheese
* 1 spring onion diced (Green
onions)
* 1 small chorizo
sausage
* I serving basic
grits
* 2 beaten eggs
Directions
Make basic grits and stir in
cheese, put off to one side.
Skin and dice chorizo sausage and
fry in pan with spring onion(green onions).
Add eggs and scramble mixing
well.
Put grits on plate, scrap eggs
and sausage on top. Finish with the chunky salsa.(You can add
the salsa to the grits at the same time as the cheese. Whatever
works for you.)
Easy on the salt as there is
enough salt in sausage and cheese.
You can put sausage, spring
onions, cheese and salsa in the grits as they cook and just top
with eggs before serving. That works too!
