Red Eye Gravy Recipe

Ingredients

* Ham Drippings
* 2 slices - country ham (Salt Cured is best)
* 1/2 cup - brewed coffee or water

Directions

Prepare 6 servings of grits or hot biscuits. In iron skillet, cover ham with water and cover. Cook country ham slices until browned. Remove from Iron skillet. Add a little water to ham fat, creating a brown or "red eye" gravey. Some folks add a little coffee.

Cook over medium heat 2 to 3 minutes, stirring in ham drippings from bottom of skillet. Spoon over hot cooked grits or biscuits and serve.

These days, salt cured country ham is generally a specialty ham . In the past, it was a breakfast staple. It is saltier, and drier than you typical ham. Most country hams are cured with salt and "smoked".

Red Eye Gravy is generally clear, a little bit red .. a little goes a long way.
