Loaded Baked Potato Salad

Ingredients

    * 2 lb of Ground Beef or Ground Chuck
    * 1 Medium Size Green Pepper
    * 1 Can of Tomato Soup
    * 1Can of Mushroom Soup
    * 1 lb of Egg Noodles
    * 1 Large bag of Finely Shredded Chedar Cheese
    * 8 med baking potatoes
    * 1 1/2 cups mayonnaise
    * 2 cups sour cream
    * 8 green onions chopped
    * 2 cups shredded sharp cheddar cheese
    * 1 pkg chopped raw bacon
    * salt and pepper to taste

Directions

Heat oven to 450 degrees. Place potatoes in the microwave for about 15 minutes. Then dip in oil with a fork, draining excess. Place on a cookie sheet and bake until fork tender, about 1/2 hour. Cook bacon until crisp, and drain on paper towels. In a large bowl mix mayonnaise, sour cream, chopped green onions, shredded cheddar and chopped bacon. When cool enough to handle cut potatoes into 1-inch cubes. Put cubes in mixture and mix well. Taste; adjust seasoning with salt and pepper. Refrigerate until just before serving.
Serves 8.
