Lazy Day Cake Recipe

Ingredients

* 1 teaspoon - soda
* 1/2 teaspoon - salt
* 1 1/2 cups - flour
* 1 cup - sugar
* 3 tablespoons - cocoa (heaping)
* 1 teaspoon - vanilla
* 5 tablespoons - melted butter
* 1 tablespoon - vinegar
* 1 cup - water
* 1 teaspoon - soda
* 3 - egg whites (room temperature)
* 1/2 cup - brown sugar
* 1 teaspoon - vanilla
* Chopped Walnuts

Directions

Blend and sift together flour, salt, soda, sugar, and cocoa. Place mixture in bowl.

Make three little "wells" or depressions in dry mix. Pour vanilla in one, vinegar in the next, and butter in the last. Add water and MIX til smooth.

Put in greased 7"x 11" pan. Bake 30-35 Minutes in 350 degree oven. Put meringue and crushed walnut topping on cake 5 minutes BEFORE it finishes baking and return to bake until toasted brown.

For Topping:

Beat egg whites until stiff. Slowly add brown sugar. Add vanilla to STIFF Topping and fold in slowly.

Spread over top of cake. Sprinkle chopped walnuts over topping. Brown for 5 minutes or until toasted.
