Jalapeno Corn Bread Recipe

Ingredients

* 1/4 - 1/2 teaspoon - baking soda
* 1 - egg (lightly beaten)
* 2/3 cup - buttermilk (room temperature)
* 2 tablespoons - oil
* 3/4 cup + 2 tablespoons - yellow cornmeal
* 1/2 cup - fresh corn kernels
* 1/3 cup - whole wheat flour
* 1/2 - 1 cup - chopped onion
* 1 tablespoon - honey
* 3/4 cup - sharp cheddar cheese (grated)
* 1 teaspoon - sea salt (optional)
* 2 - jalapeno peppers (diced, remove seeds)

Directions

Combine wet ingredients in one bowl, dry ingredients in another.

Combine both bowls of ingredients together.

Add Corn, Peppers, Onion, and Cheese to mixture.

Pour mixture into 8 x 8 greased loaf pan.

Bake on 400 for 25 - 35 minutes until toothpick comes out clean.
