Indian Pudding Recipe
Ingredients
* 3 eggs beaten
* 1/4 cup chopped
almonds
* 1/4 cup raisins
* 1 tsp cinnamon
* 1 tsp vanilla
* 1 1/3 cup milk
* 1 tbsp butter
* 2 cups boiling water
* 1/3 cup sugar
* 1/4 tsp salt
* 1/2 cup Quick Grits
Directions
1. Heat the oven to 325
degrees F. Stir grits into salted boiling water in small heavy
saucepan.
2. Return to a boil. Reduce heat
& cook for 2 1/2 to 5 minutes, stirring
occasionally.
3. Stir in sugar and butter. Add
eggs, milk, vanilla and cinnamon to grits mixture and mix
well.
4. Pour into greased 8 inch
square baking dish - sprinkle with raisins and
almonds.
5. Bake about 50 minutes. cut
into squares; serve warm or cold. Garnish with whipped
cream.
