Hoe Cakes Recipe
Ingredients
* 1 cup buttermilk
* 1 tablespoon butter
* 1/8 teaspoon salt
* 1teaspoon baking
powder
* 2 1/4 cup flour
Directions
Mix buttermilk with butter,
salt and baking powder. Add flour gradually, leaving enough to
flour hands for shaping. Dough should be a little stiff. Divide
into two parts. With each part, shape into a giant biscuit
shape. Put one at a time into a greased preheated cast iron
skillet. Use hands to pat down into bottom of skillet and even
out dough. Lightly brown one side, then turn and brown other
side.
* note: flour tortillas are
made with water instead of buttermilk; and rolled out into
small circles or patted out by hand into circle shape; cook the
same.
