Corn Pone Cornbread Recipe
Ingredients
* 1 cup - all-purpose
flour
* 1 tablespoon - sugar
* 1/2 teaspoon - soda
* 1 teaspoon - salt
* 1 1/2 teaspoon - double acting
baking powder
* 1 cup - buttermilk
* 2 - eggs
* 3 to 4 tablespoon - butter
(melted) or bacon fat
Directions
Corn Pone Cornbread is
cornbread just cooked in a special "Cast Iron Skillet" that
features corncob shaped molds.
Variations on the recipe can
feature fresh or canned corn, "Cracklins" or nothing ... but
cornbread.
Preheat oven to 425
degrees
Stir the liquid into the dry
ingredients with a few swift strokes. You then add: 1/4 cup
salt port cracklins (skins). Pour the batter into a preheated
greased pan and bake the bread for about 1/2 hour.
Sift, then measure:
1 cup All-purpose
flour
Resift with:
1/2 teaspoon Soda
1 1/2 teaspoon Double acting
baking powder
1 tablespoon Sugar
1 teaspoon Salt
Add:
3/4 cup Yellow water ground corn
meal
Combine and beat:
1 cup Buttermilk
2 Eggs
3 to 4 tablespoon Melted butter
or bacon fat
