Catfish Chowder Recipe
Ingredients
* 3 cups - cream or Half &
Half
* 1/4 pound - butter
* 1 medium - onion,
chopped
* 1 tablespoon - walnuts,
crushed
* 1 teaspoon - ground
mustard
* 2 tablespoons -
cornstarch
* 6 - catfish filets
* 3 tablespoons - cold
water
* 3 cups - water
* Finely chopped fresh
scallions
Directions
Cut catfish into 2 inch
pieces, place into large sauce pan with onion, butter, mustard
and crushed walnuts. Cook over medium heat, until onions are
clear, reduce heat. Add 3 cups of water and cream, simmer over
very low heat for one hour.
Combine cornstarch and 3
tablespoons water, stir into soup slowly, simmer until
thickened. Add salt and pepper to taste.
Garnish with
scallions.
Serves 4-6
