Buttermilk Cracklin' Cornbread Recipe
Ingredients
* 2 - eggs
* 3 to 4 tablespoons - butter
(melted)or bacon fat
* 1 cup - buttermilk
* 3/4 cup - Yellow, water ground
corn meal
* 1 teaspoon - salt
* 1 tablespoon - sugar
* 1/2 teaspoon - soda
* 1 1/2 teaspoons - double acting
baking powder
* 1 cup - all-purpose
flour
Directions
Preheat oven to 425
degrees
Stir the liquid into the dry
ingredients with a few swift strokes. You then add: 1/4 cup
salt port cracklins (skins)
Pour the batter into a
preheated greased pan and bake the bread for about 1/2
hour.
Sift, then measure:
1 cup All-purpose
flour
Resift with:
1/2 teaspoon Soda
1 1/2 teaspoon Double acting
baking powder
1 tablespoon Sugar
1 teaspoon Salt
Add:
3/4 cup Yellow water ground corn
meal
Combine and beat:
1 cup Buttermilk
2 Eggs
3 to 4 tablespoon Melted butter
or bacon fat
