Directions
"Here is a recipe I learned in the Bahamas from
a local version of "Bloody Mary" of "South Pacific." It
is not very healthy but, of course, tastes great ... I
suppose it would work with good white grits, but to us
that is a sacrilege."
Prepare grits, cover and let sit off heat. Fry up bacon, drain
all but a tablespoon or more of fat. Stir in eggs and scramble
until almost firm. Stir in cooked grits, breaking up using
spatula in a cutting motion. Add butter and mix, stir well.
Serve with hot sauce. Use a good-flavored Louisiana sauce, not
overly hot Tabasco. Salt and maybe pepper to taste.
